Gather your ingredients and let’s get started!
2.5 lbs red potatoes (quartered-I leave the skins on)
3/4 cup water
1/2 cup sour cream
1/2 cup milk
2 tablespoons butter
salt and pepper to taste
2 cups cheddar cheese
8 pieces bacon cooked and crumbled
Place potatoes, water, and salt in slow cooker. Cover and cook on LOW for 4-6 hours. Drain excess water from potatoes. Mash the potatoes with a potato masher or a fork. Add in sour cream, milk, butter, cheddar cheese, and bacon; blend with hand blender or potato masher until desired consistency. (I stick my hand blender right into the crockpot- I’m all about the less dishes the better!) Keep on warm setting until ready to serve. Salt and pepper to taste
